Banana Betty

I conducted a successful experiment involving bananas and oatmeal and the oven. I realize that posting a recipe without a photo is just not right, but at the time I was baking I hadn’t thought of blogging. You will just have to trust me that this was super easy and quite delicious.

5-6 bananas (can be just about any level of ripe, though less ripe is better than over-ripe)
1/2 Cup walnuts
2 Tbl butter
1/2 tsp vanilla (or use cinnamon or ginger instead)
1 Tbl maple syrup or honey
1/2 Cup oatmeal

Grease a covered baking dish (mine is about 8 inches in diameter). Slice bananas into the dish. Add walnuts, toss lightly. Add vanilla and maple syrup, toss lightly again. Lay the butter in small pats across the top. Cover with the oatmeal. Place the lid on the dish and bake at 375 for about 30 minutes (hotter oven is okay too).
